TWO INGREDIENT COOKIES GONE WILD!
Love the two ingredient cookie recipes that are on-line!! Bananas and
oats and Bob’s your uncle, you have instant, yummy cookies that are healthy to
boot!
Today I decided to do some of the add-ins. I’ve made them with cinnamon
and dark chocolate chips but today I was hanker’in for peanut butter cookies so
here’s the scoop:
PEANUT BUTTER CHOCOLATE CHIP TWO INGREDIENT COOKIES
2 large or 3 medium bananas, very ripe
1 ½ cup large flake oats
1 Tablespoon ground flax seed (I just grind mine in the coffee grinder)
1 tea to 1 Tablespoon of chia seeds
2 Tablespoons (Or more to your liking ) natural peanut butter ( or any other nut butter you wish If
you use pb with sugar in it, the cookies will be very sweet and you lose the
healthy aspect of the cookies. The big brand pb makers use refined sugars up to
the same amount as the peanuts in their product)
¼ cup chocolate chips (I started using the Costco/Kirkland brand. They
are responsibly sourced cacao with 51% cacao and they are far superior to any
other brand I’ve used in the past!)
Directions:
Mash bananas (I use my Cuisinart mixer with the K-beater). Process
until bananas are smooth and most of the larger lumps are gone.
Slowly add 1 cup of your oats and mix well. Add the other ½ cup of oats
until mixture is well blended. Depending on the size/ripeness of bananas you
may have to add more oats. Once mixture is firm enough to hold a shape, add
chips until blended throughout mixture. If you find your mixture still a bit “soupy”,
add small spoonful’s of oats until consistency is just able to hold together.
You don’t want your mixture to be too dry so each cookies scoop will be very
moist looking for best results
I use a cookie scoop as it’s so easy to make even portions of dough.
Drop each scoop onto a greased cookie sheet and bake for 12-15 minutes. Mine
were done in 12 as I have a convection oven. Cookies should just be starting to
brown around the edges.
To serve: warm them up a bit as
they are REALLY good warm. Store in an air tight container and if longer than a
day or two, store in fridge as well.
